Festive Fruity Quinoa Salad

 

How to:

1. Rinse 1½  of Quinoa. Add quinoa and 2½ C water into a saucepan, bring to boil. 

2. Once boiled, lower heat to simmer. Cover and allow to simmer for 15 minutes. 

3. Once cooked, allow to cool and set aside.

4. In a large mixing bowl, mix blueberries, cubed kiwis, lettuce and quinoa. 

5. Sprinkle pomegranate seeds and Frosted Cinnamon Nut Mix for extra crunch.
